Butter Cookies


Ingredients
1 cup butter
1 cup powdered sugar
2 cups all purpose flour
Pinch of nutmeg powder
1/4 tsp cardamom powder
5-6 tblsp of pista powder (ground almond)

Preparation
Mix the butter and powdered sugar. Gently add the flour, cardamom, nutmeg, and pista powder. Make into small balls. Keep on a baking sheet 2" apart and bake at 300 degrees for about 20-30 minutes or till done. 



MEATLESS MONDAY  

No Bake Cookies


Ingredients
• 1 ½ cups brown sugar
• ½ cup milk
• ½ cup butter
• 4 tablespoons carob powder
• ½ cup peanut butter
• 3 cups quick-cooking oats
• 1 teaspoon vanilla extract


Preparation
In a medium saucepan, combine sugar, milk, butter, and carob powder. Bring to a boil, and cook for 2 minutes. Turn off the heat and stir in peanut butter, oats, and vanilla. If the mixture is too wet, add a little bit more of oats. Drop by teaspoonfuls onto wax paper. Let cool for an hour.***You may add some dried fruits and nuts and they will turn out to be great as well.

MEATLESS MONDAY  

 Pineapple Cake



Ingredients
•All purpose flour…….1½ C
•Sugar………1 ½ C
•Ground cinnamon…..½ Tsp
•Baking soda……..¼ Tsp
•Salt……………¼ Tsp
•Yoghurt……………..3 Tbs
•Melted butter……………¾ C
•Finely grated carrots……1½ C
•Vanilla essence…………1 Tsp
•Well drained crushed pineapple….½ C
•Chopped nuts……………………¼ C

Preparation
1) In a mixing bowl, combine flour, sugar, cinnamon, baking soda and salt. Add yogurt, butter, carrots and vanilla. Beat until well combined.
Stir in the pineapple and nuts.
2) Pour into a greased and dusted 8-inch x 8-inch baking pan. Bake in a preheated oven at 350 F/ 180 C for 1 hour or until a toothpick
inserted near the center comes out clean. Cool on wire racks. Cut into pieces of desired size.
